The Roasted Hojicha Green Tea Noike is a delicious light roasted hojicha from Mr. Noike in Kyoto, with slightly sweeter notes of caramel and milk chocolate
When evaluating the flavor of the Roasted Hojicha Green Tea Noike, we consider both the aroma and how the tea interacts with the palate. We assess for attributes such as dryness, acidity, minerality, and sweetness. Additionally, we evaluate the texture of the tea, or mouthfeel. As this is a roasted tea, we also take into account the degree to which it has been roasted, as this is a characteristic shared by most roasted teas.
The leaves of the roasted hojicha are composed of a combination of stems and larger flatter leaves. The leaves are a dark brown color and the stems are a lighter brown color.
The aroma coming off the wet leaves of the hojicha green tea is smoky and earthy, with notes of pine and roasted cedar.
The hojicha green tea draws you in with a light, mineral sweetness. The roasted flavors begin to play in the mid palate, and they are complemented by this light acidity that quenches the palate. The tea has a light, sweet woodiness in the finish and it leaves the palate with a cool, cleansing sensation.
The texture of this roasted hojicha is lighter and thinner, which allows space for the sweetness and acidity to entertain the palate. There is a hint of this tingling minerality and a light roast.

We also like to partner with smaller farms, who may not yet have the resources for the soil testing and sampling, but we accept tea from them under the "pesticide-free" label. This allows us to support and provide opportunities to smaller farmers who produce exceptional quality tea, while still upholding our commitment to quality and sustainability.
For brewing the Roasted Hojicha Green Tea Noike, we recommend using a slightly higher temperature and a shorter brewing time. When it comes to roasted hojicha, sometimes it’s nice to brew the tea a bit hotter to really get a strong flavor from it!
Heat water to a temperature of 80°C (175°F), which is the ideal temperature for the Hojicha Green Tea.
Add 5 grams of Roasted Hojicha Green Tea Noike to your teapot and pour in 150ml of the heated water.
Let the hojicha green tea brew in the water for 1 minute without disturbing the leaves. This allows the stems of the tea to release a nice roasted flavor and aroma into the water.
After the brewing time is up, pour out the brewed hojicha green tea from the teapot. The teapot will automatically filter out the leaves and the stems so they don't end up in your cup. Enjoy your delicious cup of hojicha green tea!
Don't throw out your hojicha green tea leaves after the first brew! You can enjoy multiple cups of tea from the same green tea leaves. Simply add the same hot water you used before to the teapot and let the leaves brew for just 20 seconds for subsequent infusions.
We do not recommend cold brewing the Roasted Hojicha Green Tea Noike
For the best possible hojicha green tea experience, we recommend brewing your roasted hojicha with a kyusu teapot. This is a traditional Japanese teapot designed to provide enough space for the tea leaves to unfurl and release these warm roasted flavors into the water.
The kyusu also has a built-in sifter, which automatically filters out the tea leaves as you pour, making sure that you get a smooth and enjoyable tea-drinking experience. Investing in a kyusu teapot will take your hojicha green tea brewing to the next level and help you get the most out of this exceptional tea.
If you don’t have access to a kyusu teapot, the next best thing is using a tea strainer for the hojicha green tea. This may not produce as rich of a flavor because it doesn’t provide as much space as a kyusu, but at least it will keep the tea leaves out of your cup! You can always upgrade your teaware later.
Information about the farm
As the name would suggest, the Roasted Hojicha Green Tea Noike is produced by Mr. Noike, a talented farmer outside of Kyoto. Mr. Noike used to live in Tokyo, but he decided to embrace a quieter life in the Japanese countryside, where he tends to his small tea field and learns about the intricacies of tea farming.

The Roasted Hojicha Green Tea Noike is grown in a small pine forest outside the city of Kyoto. This pine forest can actually improve the flavor of the tea, as the tall tree provide partial shading throughout the day, almost acting like a natural Kabuse.
The Roasted Hojicha Green Tea Noike is made from the Yabukita cultivar, the most popular type of tea plant in Japan.
There are two reasons that have led to the success of the Yabukita, which now makes up close to 75% of Japan’s total tea production. The first is that it is resistant to frost, which allows it to withstand the comparatively cold winters of central Japan. Also, it produces a rich savory flavor with lots of these citrusy or grassy characteristics. These grassy characteristics are removed during the roasting process, so you won’t notice them in the hojicha green tea.

This tea Hojicha is one that I was especially eager to sample, as I had never had one before. This is a roasted green tea, however they only use the stems and not the leaves, which produces a very low caffeine tea. It was a very thick, sweet, roasty tea and very reminiscent of a roasted Tie Guan Yin or Tie Louhan in every olfactory aspect. A good gateway tea for people who are used to those sweeter teas and good for late-afternoon or before bed due to the low caffeine content. It was a bit cloudy and cool this morning, too so it just happened to match the weather!

There are no strong aromas on the dry leaves, but the tea looks great and has a lot of stems, giving it somewhat of a camping vibe. The infusion is 5g, 70℃, 60 seconds, which yields a satisfying bright amber color that's lighter than most hojichas I've tried. It's smooth and pleasant, with a less overpowering roastedness than a lot of hojichas, and leaving a brown sugar aftertaste in the throat. The second infusion is more full-bodied.

This tea taste about how you would expect, like a green tea, but roasted. I wasn't so sure about it at first and was having trouble getting the full flavour out of it but I ended up really loving it. I would recommend it at 70-75 degrees Celsius for 1-2 minutes with 5g per 150ml of water. It says 20 seconds for the 2nd and 3rd steeps but I like to really taste my tea so i brew it longer and also go up to about 6 steeps before I give it up.
