How to
Ice Brew Tea
Koridashi — ice melting slowly over shaded leaf. The slowest way to brew tea, and the purest expression of umami we know.
Fill with Ice
A shallow pot or bowl, filled with ice cubes.
Add the Leaves
5 g of shaded leaf, resting on top of the ice.
Wait for the Melt
20 to 30 minutes as the ice releases its water.
Pour the Drops
A few concentrated mouthfuls, thick with umami.
