To evaluate the flavor of the Chanoka Mountain Sencha we look for a combination of the aroma and also how the tea interacts with the palate. Does it produce a dryness, acidity, minerality, sweetness or umami? We’ll also evaluate the texture of the tea, otherwise known as mouthfeel. Finally, for sencha tea, we’ll evaluate it based on how vegetal the taste profile is as this is a common characteristic throughout most sencha teas.Β 

Step 1 - Observing the Appearance

The leaves of this mountain sencha are quite dark and tightly rolled. They almost look like gyokuro but one shade or two lighter.

Step 2 - Assessing the Aroma

The aroma coming off of the wet leaves of the Chanoka mountain sencha drifts into this warm, sweet and slightly smoky direction, with a tiny hint of salt

Step 3 - Tasting the Tea

The mountain sencha begins with a smooth sweetness which soon develops into a strong, mouthtingling minerality. The minerality begins to dominate the palate but is soon overtaken by sweet corn and a hint of asparagus followed by a long, sweet finish.

Step 4 - Evaluating the sensation on the palate

The strong minerality of the mountain sencha dominates the taste profile, followed by the sweetness. There is also a tiny bit of dryness, but it is not easily noticeable. The tea is light, fresh and with a very thin consistency that is easy to drink.Β

JAS Certified

If you come across the Japanese Agriculture Standards (JAS) label on any of our tea products, this indicates that they are grown without the use of pesticides or chemicals. For larger tea farms we work with, we require them to provide the JAS label, which is acquired through soil testing and sampling.

Additionally, we collaborate with smaller tea farmers who may not have yet obtained JAS certification. We source their tea under the "pesticide-free" label, which allows people to explore exceptional teas from smaller producers while maintaining our standards for sustainability and environmental preservation.

How to prepare the tea

For the preparation of the Chanoka mountain sencha, it is recommended to use water at a lower temperature and a shorter brewing time. 1 minute is more than enough time to extract a delicious flavor from the mountain sencha.

    Step 1

    Heat the water to 60 degrees Celsius or 140 degrees Fahrenheit, as it is the perfect temperature for this type of tea.

    Step 2

    Take 5 grams of the mountain sencha and put it into a teapot (kyusu teapots work best)

    Step 3

    Pour 150ml of the hot water over the leaves. Let the leave sinfuse in the water for 1 minute without swirling or moving the teapot. If you agitate the tea leaves while they are brewing, it might release bitterness.

    Step 4

    After the brewing time is up, you can pour out the tea from the pot. The teapot's filter will keep the leaves out of your cup. Now you can sit back and enjoy your delicious Uji Sencha Chanoka!

    2nd brew

    Don't throw out the mountain sencha after the first brewing! You can extract an additional 2-3 cups from this tea by adding more hot water to the teapot and allowing the leaves to steep for 20 seconds during each brewing cycle.

Necessary teaware

For optimal results when brewing Uji Sencha Chanoka, we suggest using a kyusu teapot, particularly a Fukamushi teapot that features a circular metal filter to prevent clogging and facilitate easy pouring. Once the recommended brewing time has elapsed, it is recommended to promptly pour the tea to prevent over-brewing.

Alternative without teawareΒ 

In the absence of a kyusu teapot, a tea strainer can serve as a suitable alternative for brewing mountain sencha. By straining the tea leaves, you can halt the brewing process at the ideal moment, ensuring optimal taste and flavor.

Information about the farm

We source this tea from Takada Masahiro, a farmer based in Uji, who runs the company Chanoka. The legacy of Chanoka dates back to 1900, when Masahiro's great grandfather established their first tea garden in Uji. Since then, their family has been passionately involved in cultivating and manufacturing some of the finest teas in Japan.

The mountain sencha is sourced from Uji, the most famous region for Japanese green tea production. The specific green tea is cultivated on Mr. Chanoka's farm in Uji. Grown at an altitude of 400 meters, this tea is unshaded, allowing it to maintain some of it’s more citrusy flavor profiles.Β

The Chanoka mountain sencha is made from the Yabukita cultivar, the most popular tea variety in Japan.
