To evaluate the Shizuoka Matcha, we evaluated the texture of the tea as well as the flavor. Does it produce a dryness, sweetness, minerality or acidity? Weā€™ll also evaluate how thick or rich the consistency of the matcha is, otherwise known as mouthfeel. Finally, for matcha specifically, we like to take a look at the vegetal flavor of the tea, as this is a profile consistent across all types of matcha.

How to prepare the tea

For the best bowl of matcha tea, follow these fundamental steps when preparing the Shizuoka Matcha Kakitsubata:

    Step 1

    Take 2 grams of matcha powder and sift it into your matcha bowl to eliminate clumps that may form due to the humidity.

    Step 2

    Heat the water up to 70 degrees Celsius or 160 degrees Fahrenheit.

    Pour in just enough water to mix the matcha powder into a paste (usually about 1 tablespoon). This process also helps the matcha mix evenly into the water. Then, pour in 100ml.

    Start to combine the matcha into the water by gently scraping off the sides and the bottom of the bowl

To prepare matcha, you will need the following accessories:

  1. Matcha bowl (chawan): a wide, shallow bowl made of ceramic or porcelain that is specifically designed for whisking matcha.
  2. Matcha whisk (chasen): a bamboo whisk with numerous thin tines that is used to mix and froth the matcha powder with hot water.
  3. Matcha scoop (chashaku): a bamboo scoop that is used to measure the right amount of matcha powder and transfer it to the matcha bowl.
  4. Sifter: sifting the matcha is an essential step in the traditional Japanese tea ceremony and is also recommended for everyday use to ensure a high-quality cup of matcha.

The Osada family has been growing tea in Shizuoka for multiple generations. After much success in the tea industry, they have turned their small family tea farm into a medium sized business, employing many people from the surrounding area.Ā 

Although they produce a larger volume of tea, they are still able to maintain high standards when it comes to quality. They accomplish this by working with small producers up in the mountains, giving them the attention to detail of a smaller organization. They moved their production facility up in the mountains to be closer to the source and the quality has improved because of it.Ā

The Shizuoka Matcha Kakitsubata is grown in the organic village of Isagawa. This is a nickname given to a neighborhood of tea farmers that have made a commitment to growing tea without the use of pesticides or chemicals.Ā 

When cultivating tea plants, its not only enough to make sure your own tea fields are pesticide free, itā€™s also important to make sure that chemicals arenā€™t being used on the surrounding land as well. This is why its so important for the farmers of Isagawa to work together and ensure that their fields are completely organic.
