To evaluate the flavor of the Sencha Shizuoka Yamaga no Sato, we look for a combination of the aroma and also how the tea interacts with the palate. Does it produce a dryness, acidity, minerality, sweetness or umami? We’ll also evaluate the texture of the tea, otherwise known as mouthfeel. Finally, for sencha tea, we’ll evaluate it based on how vegetal the taste profile is as this is a common characteristic throughout most sencha teas.
Step 1 - Observing the Appearance
The leaves of the Yamaga are broken down into smaller leaf particles which make their way into the infusion.
Step 2 - Assessing the Aroma
The aroma of the dry leaves has a citrusy and fruity note to it, which transforms into a cereal and vegetable flavor as they are wet.
Step 3 - Tasting the Tea
The tea begins with a strong mineral sweetness, which eventually transforms into a berry-tang or tartness that dominates the mid-palate, with notes of lychee berry and pineapple. The tea then leaves the palate with a slight umami finish. There is a strong minerality throughout the tea that balances out the tart berry notes.
Step 4 - Evaluating the sensation on the palate
The mouthfeel of this tea is medium thick, with a lot of sweetness and a hint of minerality. There is quite a bit of acidity which manifests as a fruity sourness and is well balanced by the strong sweetness.

JAS Certified
JAS stands for Japanese Agriculture Standards, and the label is added to products that have been certified by the Japanese government to be grown without the use of pesticides or chemicals.
When we source tea, it is important to have verification that the tea fields do not contain pesticides or chemicals. The larger tea farmers we work with are able to pay for soil samples and testing, so we require them to produce the JAS label.
There are a few smaller tea farmers we work with who have not yet made the investment into certification, and we are willing to work with them under the “pesticide free” label. We want to make sure we give opportunity to smaller tea farmers that produce great tea and not make the screening process too onerous.
How to prepare the tea
To prepare this Shizuoka sencha, you can use a lower temperature water and a shorter brewing time. Deep steamed teas like the Sencha Shizuoka Yamaga no Sato have smaller leaf particles so they infuse more quickly into the water.
Step 1
First, heat the water to a temperature of 60 degrees Celsius or 140 degrees Fahrenheit. This will be the perfect temperature for this Sencha Shizuoka
Step 2
Add 5 grams of the Sencha Shizuoka to your kyusu teapot and then pour in 150ml of the water you heated previously.
Step 3
Allow the tea leaves to brew in the water undisturbed for 45 seconds. Because this Sencha Shizuoka is a deep steamed tea, it can be brewed in a short amount of time.
Step 4
After the brewing time is up, you can pour out your Sencha Shizuoka and the teapot will automatically filter out the leaves so they don’t end up in your cup. Enjoy your tea!
2nd brew
Don't throw your leaves out after the first brewing! It can be brewed 2-3 more times. Just add more hot water to the teapot and let the leaves brew for 20 seconds each time you reinfuse.
Cold brew

To brew up a delicious cup of this shizuoka sencha, you’ll need a kyusu teapot. The ideal teapot for this is the Fukamushi teapot, as this teapot has a circular mesh filter that makes it easier to sift out the tea leaves as you pour. Without this special teapot, you run the risk of the fukamushi sencha clogging as you pour, causing it to overbrew.
Alternative without teaware
If you don’t have a teapot at home, we recommend using a tea strainer for the sencha shizuoka. This will separate the tea leaves as you pour and stop the infusion so the tea doesn’t overbrew.
The yamaga is a shizuoka sencha green tea, which means it is grown in Shizuoka, Japan’s largest tea growing region. This area benefits from some mountainous terrain and many different types of Shizuoka sencha like the yamaga are grown on steep slopes, providing partial shading throughout the day.
The farmers we met with from Satoen proudly showed us around their facilities. The family has been producing green tea since 1948 and what struck us most was the great attention to detail they paid to every stage of the tea production process.
The rooms where they finish the production of their green tea are heavily controlled and sanitized to make sure no foreign material ends up in the tea. During the early screening process of the tea, they actually use a machine that scans the color of the tea leaves passing through and picks out any leaves or stems that don’t match this perfectly green color palate.
Working with farmers that care this deeply about the quality of the tea they produce makes our work much easier, as every customer knows the tea they’re getting will be good every time!

Japan
The Sencha Shizuoka Yamaga no Sato was produced in Shizuoka, Japan's largest tea growing region. The climate in Shizuoka is a little bit cold for growing tea plants, so the farmers must work tirelessly to keep the plants strong and healthy during the winters.
This involves the use of a lot of ingenious techniques, like straw at the base of the tea plants to insulate the heat and moisture of the roots and also the use of fans to keep the tea plants above freezing temperature. By keeping the frost away from the tea plants, the farmers at Satoen are able to produce delicious tasting green tea every year!
Cultivar and tea plant variety
The cultivars used to produce this shizuoka sencha are the yabukita and the asatsuyu.
Yabukita
The yabukita cultivar is the most popular tea plant variety in Japan because it can handle the comparatively harsh Shizuoka winters. This tea provides a nice vegetal flavor to the tea, as well as a bit of “umami”. The yabukita cultivar forms the basis of the tasting structure and the Asatsuyu softens the flavor.
Asatsuyu
Asatsuyu on the other hand is a more mild and delicate cultivar that provides a sweet taste. It is known as a “natural gyokuro” because it maintains this nice sweet flavor even without the long shading process. This is the perfect tea varietal to balance out the slightly more grassy flavors of the Yabukita.

I had only prepared bancha before this, and my first brew was without a thermometer. I ended up running it 20 seconds longer and perhaps 20 degrees c hotter than instructed, and the results were as poor as you might expect. Later attempts revealed a super delicate airy, fruity character with little bitterness. (Very much unlike the oily viscosity and boldness of the bancha.) So, if you have this tea, take the time to dial in the variables. You can reach a flavor as nice as it smells from the bag.

I love this green tea! This is my first experience brewing loose tea and I am enjoying making this amazing green tea and then drinking the whole tea pot. It has a wonderful aroma and the taste is just what I was looking for: a grassy, vegetal and sweet very satisfying tea. I tend to be sensitive to caffeine but I have had no issues with the light caffeine in this tea even when I drink it late afternoon. Fruity scent on the dry leaves. Gentle umami on the first infusion. Slight fruity notes. Hits the back of the tongue first and then spreads to the sides. Second infusion gets very rich. Tastes quite fresh. I think this would make a lovely cold brew. Green gets really deep on the third infusion. I was really looking forward to trying this tea, especially since it was marketed as having a good umami flavor. When I finally opened the bag I was disappointed to see that the tea was manly dust and broken leaves. The tea was mild and one dimensional, I didn’t really get a strong umami flavor.
