In order to properly assess the Uji Matcha Chanoka Okumidori, we conducted a comprehensive evaluation of both its texture and flavor. Our assessment included a close examination of its dryness, sweetness, minerality, and acidity, as well as an evaluation of its thickness and richness, which is commonly referred to as mouthfeel. Given the unique qualities of matcha tea, we also made sure to pay close attention to the vegetal flavor profile, which is a defining characteristic of this type of tea.

Step 1 - Observing the Appearance

The color of this matcha from uji japan is a darker jade green color and its a smooth, fine powder.

Step 2 - Assessing the Aroma

The aroma coming off the powder of the matcha kyoto uji is mixed with the water is fresh and grassy, with a slight aroma of dark chocolate.

Step 3 - Tasting the Tea

The Uji Matcha Chanoka Okumidori starts off with a smooth, steamed vegetable note, which later evolves into a slight grassiness. The matcha then begins to drift into a drier direction and it leaves the palate with an invigorating astringency. On the finish, there is almost a note of bitter dark chocolate.

The Uji Matcha Chanoka Okumidori plays around more with these slightly drier and more grassy flavor profiles. It is still smooth and consistent, but the astringency leads to a more engaging drinking experience.

At Nio, we prefer to source tea from fields that are entirely free of pesticides and chemicals. In our selection process, we require larger tea farmers to provide us with the JAS label, which can be obtained through soil sampling and testing.

We also work with smaller tea farmers who may not have acquired certification yet, and we accept the "pesticide-free" label. Our aim is to provide opportunities to these farmers while still upholding our pledge to quality, pesticide-free farming.

How to prepare the tea

To prepare the Uji matcha, follow these basic steps for optimal results. While it's possible to simplify this process, we recommend following these steps for the best matcha experience.

    Step 1

    Start by sifting 2 grams of matcha powder into your bowl to remove clumps that may have formed due to humidity.

    Heat the water up to 70 degrees Celsius or 160 degrees Fahrenheit.

    Next, pour approximately 1 tablespoon of water into the bowl and mix the powder into a paste to ensure even distribution. Then, pour 100ml of water into the bowl

    Gently scrape the sides and bottom of the bowl to ensure that the matcha is thoroughly combined with the water.

    Finally, use your wrist to whisk the matcha up in rapid zigzag motions until a light green foam appears on top.

We source this tea from Takada Masahiro, a farmer based in Uji, who runs his family business at Chanoka. The legacy of Chanoka dates back to 1900, when Masahiro's great grandfather established their first tea garden in Uji. Since then, their family has been passionately involved in cultivating and manufacturing some of the finest teas in Japan.

This is a matcha from uji japan, the most famous region for Japanese green tea production. The specific green tea is cultivated on Mr. Chanoka's farm in Uji. Grown at an altitude of 400 meters, the matcha is shaded for 3 weeks before the harvest in order to develop a sweeter and more savory flavor.

The Uji matcha is made from the Okumidori cultivar and based on customer feedback, this is consistently our most popular type of matcha at Nio Teas.
