To evaluate the flavor of the Golden Sencha Yabukita Kasugaen we look for a combination of the aroma and also how the tea interacts with the palate. Does it produce a dryness, acidity, minerality, sweetness or umami? We’ll also evaluate the texture of the tea, otherwise known as mouthfeel. Finally, for sencha tea, we’ll evaluate it based on how vegetal the taste profile is as this is a common characteristic throughout most sencha teas.Β 

Step 1 - Observing the Appearance

The leaves of the yabukita sencha are in between the light yellowish green you would find in an unshaded sencha and the dark green you would find with a gyokuro. The leaves are smaller for the most part, but you can clearly see them formed into thin needle shapes.

Step 2 - Assessing the Aroma

The aroma coming off of the wet tea leaves is slightly sweet and starchy, with notes of sweet corn, dough and a slight hint of these floral and citrusy aromas.

Step 3 - Tasting the Tea

This yabukita sencha draws you in with a sweet grassy flavor before diving into a deep rich savory taste on the mid palate. The finish is slightly drier, with notes of sweet corn and straw. The tea leaves the palate with a clean and fresh feeling with quite a bit of minerality.Β 

Step 4 - Evaluating the sensation on the palate

The mouthfeel of this premium sencha yabukita is on the thinner side, with a slight tingling minerality and a healthy balance of dryness and acidity. It doesn’t fully quench the palate, but it doesn’t dry it out either.Β 

The tea has a surprising amount of sweetness, but this sweetness is mostly overshadowed by the strong steamed vegetable flavor profile. There is a hint of savory flavor in this tea but not compared to a gyokuro.

The Japanese Agriculture Standards (JAS) certification is granted by the Japanese government to certify that products are grown without the use of pesticides or chemicals. For us, it is essential to ensure that the tea we source is pesticide and chemical-free. The larger tea farms we work with are required to have the JAS label, as they can afford soil testing and sampling.

We also work with smaller tea farmers who have not obtained the JAS certification yet, and we source their tea under the β€œpesticide-free” label. We believe in supporting small tea farmers who produce exceptional tea while maintaining our commitment to high-quality tea.

How to prepare the tea

For the preparation of this premium sencha yabukita, it is recommended to brew with lower temperature water and a shorter brewing time. 1 minute should be more than enough time to extract a great flavor from the yabukita sencha.

    Step 1

    Heat water to 60Β°C (140Β°F), which is the ideal temperature for this tea.

    Step 2

    Add 5 grams of Golden Sencha Yabukita Kasugaen into a kyusu teapot.

    Step 3

    Pour 150ml of the heated water over the leaves. Let the tea steep for 1 minute without stirring. This should allow the leaves of the sencha yabukita enough time to open up and release their flavor into the water.

    Once the brewing time is complete, pour the tea out of the pot. The teapot's filter will automatically sift out the tea leaves so they don’t end up in your cup. Sit back, relax and enjoy your cup of tea!

    2nd brew

    Do not dispose of your tea leaves after the initial brewing of Golden Sencha Yabukita Kasugaen! You can brew them for an additional 2-3 times. To do so, simply add more hot water to the teapot and steep the leaves for 20 seconds with each subsequent brew.

Necessary teaware

To prepare a delicious cup of golden sencha yabukita, you may want a kyusu teapot. The best type of teapot for this tea is a Fukamushi teapot, which makes it easier to pour smaller leaf teas like this without clogging the filter.

Alternative without teawareΒ 

In case you’re not able to get a kyusu teapot, we suggest using a tea strainer to prepare golden sencha yabukita. The strainer will also separate the tea leaves when you pour, which prevents the tea from over-brewing.

Golden Sencha Yabukita is cultivated in the Kagoshima prefecture of Japan, situated on the southernmost part of the Kyushu Island, one of the four main Japanese islands. This area is renowned for producing some of the finest green teas in Japan, owing to its nutrient-rich volcanic soils and mild subtropical climate.

Mr. Kawaji, a skilled tea farmer based in Southern Japan, is responsible for crafting the Golden Sencha Yabukita. His expertise lies in creating deep steamed teas, such as the Asatsuyu and Murasaki varieties. The longer steaming process involved in their production imparts a vibrant green color to the tea, reduces its bitterness, and enhances its steamed vegetable or slightly fruity notes.

As the name would suggest, the Golden Sencha Yabukita is made from the Yabukita cultivar, the most popular tea variety in Japan.

    There are two reasons why the Yabukita cultivar is the most common type of tea variety used in Japan.
