Ingredients

  • 1 Tbsp matcha powder

  • 2/3 cup packed light brown sugar

  • 1 Tbsp ground cinnamon

  • 1/4 tsp fine salt

  • 1/2 cup unsalted butter, softened

  • 2 Tbsp latte matcha powder

  • 4 1/2 tsp or 2 packets instant dry yeast

  • 1/2 tsp fine salt

  • 1 cup whole milk

  • 1/2 cup unsalted butter

  • 1/2 cup sugar

  • 2 large eggs, room temperature

  • 1/2 cup unsalted butter, room temperature

  • 2 tsp vanilla extract

  • 2 1/2 cups powdered sugar

  • 1 Tbsp whole milk

  • 2 Tbsp matcha latte powder

    1. In a bowl, combine the packed light brown sugar, matcha powder, ground cinnamon, and fine salt.

    2. Add the softened unsalted butter and mix until a smooth and creamy filling forms. Set aside.

    1. In a large mixing bowl, whisk together the all-purpose flour, matcha powder, instant dry yeast, and fine salt.

    2. In a saucepan, warm the whole milk and unsalted butter over low heat until the butter melts. Remove from heat.

    3. Add sugar to the milk-butter mixture and stir until dissolved. Let the mixture cool until it reaches a warm temperature (around 110°F/43°C).

    4. Gradually add the warm milk-butter mixture to the dry ingredients, followed by the room-temperature eggs. Mix until a soft dough forms.

    5. Knead the dough on a floured surface for about 8-10 minutes until it becomes smooth and elastic. Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for 1-2 hours, or until doubled in size.

    2. Roll out the risen dough into a large rectangle on a floured surface, about 1/4-inch thick.
