If you're a fan of buttery, melt-in-your-mouth cookies and also love the vibrant flavor of matcha, then these Matcha Butter Cookies are an absolute must-try! The delightful green hue and the subtle bitterness of matcha perfectly complement the rich, buttery goodness of these cookies. Let's dive into this scrumptious and easy-to-follow recipe:

Ingredients

  • 1 tbsp latte matcha powder

  • 1/2 cup unsalted butter (113 gr), softened

  • 1/2 cup confectioners' sugar (65 gr)

  • 1 egg yolk

  • 1/2 tsp vanilla extract

  • 1 cup cake flour (125 gr)

  • 1/4 cup cornstarch (30 gr)

  • 1/2 tsp salt

Directions

  1. Start by preheating your oven to 350°F (175°C). Line a baking sheet with parchment paper.

  2. In a large mixing bowl, cream together the softened unsalted butter and confectioners' sugar until light and fluffy.

  3. Add the egg yolk and vanilla extract to the butter mixture, and continue mixing until well combined.

  4. In a separate bowl, sift together the cake flour, cornstarch, matcha powder, and salt. Gradually add the dry ingredients to the butter mixture. Mix until a soft and cohesive cookie dough forms.

  5. Take small portions of the dough and roll them into 1-inch balls. You can also use a cookie scoop to get evenly sized portions.

  6. Place the dough balls on the prepared baking sheet, leaving some space between them to allow for slight spreading.

  7. Gently press down on each dough ball with the back of a fork to create a criss-cross pattern. This not only adds a decorative touch but also helps the cookies bake evenly.

  8. Place the baking sheet in the preheated oven and bake the cookies for about 12-15 minutes or until the edges are lightly golden.

  9. The cookies will be soft when they come out of the oven but will firm up as they cool.

  10. Remove the Matcha Butter Cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
