We conducted an evaluation of the Okumidori Matcha Noike by assessing both the texture and flavor of the matcha. Our assessment includes identifying any presence of dryness, sweetness, minerality, or acidity. Additionally, we will assess the thickness and richness of the matcha, commonly referred to as mouthfeel. Finally, as matcha is known for its vegetal flavor, we will examine this profile, which is consistent across all types of matcha.

Step 1 - Observing the Appearance

This particular Okumidori matcha powder exhibits a lighter shade of green, which can be best described as a delicate and subtle hue. The gentle green color of this matcha powder is one of its distinguishing features, lending a pleasant and soothing visual appeal to the overall tea-drinking experience.

Step 2 - Assessing the Aroma

The JAS logo that you will find on some of our teas is short for Japanese Agriculture Standards. This label ensures that products are grown without pesticides or chemicals, as certified by the Japanese government

When working with larger tea farmers, we require them to provide us with the JAS label, which they can acquire through soil sampling and testing.

We also like to partner with smaller tea farmers who haven't obtained certification yet, and we accept the "pesticide-free" label. This way, we are able to provide opportunities for small farmers while still maintaining our commitment to quality and sustainability.

How to prepare the tea

While you can simplify this process if you prefer, we recommend you closely follow these steps to get the best results from your bowl of Okumidori Matcha. To prepare the Okumidori Matcha Noike, we recommend you to:

    Step 1

    Begin by sifting 2 grams of matcha powder into your matcha bowl to remove any clumps caused by humidity.

    Step 2

    Heat the water up to 70 degrees Celsius or 160 degrees Fahrenheit.

    Pour approximately 1 tablespoon of water into the bowl and mix the matcha powder into a smooth paste, ensuring an even distribution. Add 100ml of water.

    Gently scrape the sides and bottom of the bowl to thoroughly combine the matcha with the water.

    Using your wrist, whisk the matcha vigorously in rapid zigzag motions until a frothy, light green foam forms on top.

Necessary teaware

In order to prepare a perfect cup of matcha, you will require a few essential accessories. Firstly, a wide and shallow bowl, typically made of ceramic or porcelain, called a matcha bowl or chawan is a must-have, which is specifically designed for whisking the matcha. Additionally, you will require a bamboo whisk called chasen, which has numerous thin tines that are used to mix and froth the matcha powder with hot water, resulting in a smooth and creamy consistency. Furthermore, a bamboo scoop called chashaku is used to measure the right amount of matcha powder and transfer it to the matcha bowl, ensuring precise measurements every time. Last but not least, sifting the matcha through a sifter is a crucial step in the traditional Japanese tea ceremony as well as for everyday use to ensure that there are no clumps or impurities in the matcha, ensuring a high-quality cup of matcha every time.

Originally residing in Tokyo, Mr. Noike made the conscious choice to lead a more serene life in the Japanese countryside. Here, he passionately tends to his small tea field, immersing himself in the art and intricacies of tea farming, resulting in the exceptional Okumidori Matcha Noike.

The Okumidori Matcha Noike is cultivated in a unique location, nestled within a small pine forest just outside the city of Kyoto, Japan. This serene pine forest provides partial shading to the tea plants throughout the day, much like the traditional Kabuse shading technique. This natural shading from the tall pine trees adds a distinctive flavor profile to the tea, making it truly special and unique.
