Itaru Kawaji is a second-generation organic grower in Ijuin, Kagoshima, and one of Kyushu's most respected makers of fukamushi, deep-steamed sencha with a thick, jade-green cup, low bitterness, and a natural sweetness. Nearly thirty years chemical-free, a rare range of cultivars, and a maker who experiments with black, oolong, and white teas too. Every tea here is from his farm.
