Discover the results of Nio Teas’ 4 step tea tasting method

To assess the Uji Tea Chanoka Silver, we examined both its texture and flavor. Our evaluation encompassed factors such as dryness, sweetness, minerality, and acidity. Additionally, we gauged the thickness and richness of the matcha, otherwise known as mouthfeel. Lastly, we analyzed the tea's vegetal flavor, which is a characteristic that is consistent across all types of matcha.

Step 1 - Observing the Appearance

The color of this kyoto uji green tea is a darker jade green color and its a smooth, fine powder.

Step 2 - Assessing the Aroma

The aroma coming off the uji green tea as the powder is mixed with the water is fruity and slightly citrusy, with notes of strawberry in the nose

Step 3 - Tasting the Tea

The Uji Tea Chanoka Silver begins with a mellow, smooth and milky flavor and soon picks up into a bright sweetness with notes of steamed asparagus. The tea has a small amount of this savory umami flavor, but it is well balanced by the sweetness. It leaves the palate with a sweet, slightly dry note of white chocolate.

Step 4 - Evaluating the sensation on the palate

The Uji Tea Chanoka Silver has a smooth, velvety consistency that weighs heavy on the palate. The acidity and dryness of the tea is very low, leaving more space for the sweet and savory flavor profiles to dominate.

JAS Japanese Agriculture Standards logo

JAS Certified

The JAS logo on many of our products represents the Japanese Agriculture Standards, a government body that guarantees products are grown without the use of pesticides or chemicals.

When working with larger tea farmers, we require the JAS label, which can be obtained through soil sampling and testing as part of our selection process.

For smaller tea farmers who have yet to obtain certification, we accept the "pesticide-free" label to provide them with opportunities while still maintaining our commitment to pesticide-free farming.

Necessary teaware

To prepare the Uji Tea Chanoka Silver for the ultimate matcha experience, you'll need some basic utensils. Here's a list of items you may want to consider:

  • Matcha bowl: A wide, shallow bowl designed specifically for whisking matcha. The bowl is often made of ceramic or porcelain and helps to evenly distribute heat, ensuring the matcha stays at the perfect temperature while being whisked.
  • Bamboo whisk: Also known as a chasen, this tool is essential for frothing and mixing matcha. It has thin, delicate tines that are designed to create a creamy and frothy consistency when whisked properly.
  • Chashaku: This is a small, spoon-like utensil used to measure out the perfect amount of matcha powder. The chashaku is traditionally made of bamboo and can be used to transfer the powder to the bowl for whisking.
  • Sifter: To ensure a smooth and lump-free matcha, a sifter is highly recommended. It helps to remove any clumps or debris from the powder before mixing it with water, resulting in a smoother and more consistent texture.

With these four essential tools, you'll be able to prepare the Uji Tea Chanoka Silver to perfection and enjoy all the delicious and delicate flavors of this premium matcha.

Takada Masahiro farm in japan

Location of production and farmer

Information about the farm

We source this uji green tea from Takada Masahiro, a farmer based in Uji, who runs his family business at Chanoka. The legacy of Chanoka dates back to 1900, when Masahiro's great grandfather established their first tea garden in Uji. Since then, their family has been passionately involved in cultivating and manufacturing some of the finest teas in Japan.

Sourced in Uji

This is a Kyoto Uji green tea. Kyoto and Uji are the two most famous regions for Japanese green tea production. This specific green tea is cultivated on Mr. Chanoka's farm in Uji. Grown at an altitude of 400 meters, the matcha is shaded for 3 weeks before the harvest to develop a nice sweet and savory flavor.

Cultivar and tea plant variety

This Uji green tea is made from the Asahi cultivar, a rare green tea making up a small fraction of the tea produced in Japan.

  • Asahi

The name “asahi” means morning sun, and this tea cultivar is perfect for the production of matcha. When the leaves are shaded and ground, the tea produces a bright green color and a smooth, rich flavor.
