This ceremonial matcha is from the Yabukita cultivar, the most widely grown cultivar in Japan. The tea begins with a pleasant citrusy note and later develops more of these vegetal flavors of summer grass. The tea finishes with a light floral astringency.

Asamiya in Shiga prefecture was one of the original regions where tea was grown in Japan. Close to the neighboring matcha producing regions of Uji, Wazuka and Kyoto, Asamiya sits along lake Biwa, the largest body of freshwater in Japan. The lake bed used to encompass the area of Asamiya, so the soil here is incredibly rich and fertile. There are many incredible matcha teas produced and this region, and we're happy to get a chance to share a few with you.

Meet the Farmer

This tea was produced by Takatomo Katagi who took over the business from his father. His father was one of the pioneers of organic farming in Japan, growing tea without pesticides and chemical fertilizers as early as the 1970's. To take care of the insect problem without pesticides, the farmers began attracting spiders, bees and praying mantis to the field to create a healthier ecosystem. To deal with the weeds without herbicides, they plucked the weeds by hand. After much work, they finally had a crop of tea plants that were even stronger and more lively than ever before!

About the Farm

This tea comes to us from the farm of Katagi Kouka En, a family owned tea business that has been growing tea in Shiga for seven generations. The field is located in central Japan, close to Lake Biwa, the largest lake in Japan. The tea has been grown without pesticides or organic fertilizers since the 1970's. The field is fertilized with a combination of fallen leaves and soil, to create a more natural growing environment for the tea plants.

How to Brew it

Add 2 grams of matcha to a bowl and then pour in 100-150ml of 160-175F water. You can then scrape off the sides of the bowl and begin whisking with you matcha whisk
