Discover the results of Nio Teas’ 4 step tea tasting method

In our assessment of the Asamiya Saemidori Matcha, we closely examined both the texture and flavor of the tea. Our evaluation included analyzing whether it produces dryness, sweetness, minerality or acidity, as well as assessing the thickness or richness of its consistency, known as mouthfeel. Lastly, we scrutinized the vegetal flavor of the matcha, which is a distinctive characteristic shared by all types of matcha.

Step 1 - Observing the Appearance

The powder of this matcha is a slightly darker shade of green

Step 2 - Assessing the Aroma

The aroma coming off of this tea is earthy, with a hint of citrus

Step 3 - Tasting the Tea

The tea begins with a milky consistency which later turns into a vegetal and citrusy flavor profile. The acidity of the tea awakens the palate and the mild dryness towards the finish leaves the palate feeling cleansed and refreshed.

Step 4 - Evaluating the sensation on the palate

This matcha is very mild and quite smooth in its consistency, allowing the acidity and dryness to play without becoming overwhelming. There is a steamed vegetable characteristic in this tea as well as a savory note.

100% Organically grown and Ethically Sourced

At Nio, we take pride in our close collaboration with tea farmers who prioritize pesticide and chemical-free cultivation methods. We firmly believe that these natural techniques not only result in a superior flavor profile of the tea, but also promote the overall health and sustainability of the tea fields.

Through our observations, we have found that tea farms that refrain from using pesticides and chemicals not only support the growth of tea plants, but also foster a diverse ecosystem of plant and animal species. We are committed to working with tea farmers who share our values of environmentally-friendly and sustainable tea production methods.

Nio Teas Unique Organically grown sourcing process

  • Careful taste testing: We conduct thorough taste testing of each individual tea to ensure its quality and flavor meet our high standards.
  • Communication with farmers: We maintain close communication with our partner farmers, discussing their production methods and ensuring that no pesticides are being used on the tea fields. This allows us to ensure that the teas we source are grown using natural and environmentally-friendly methods.
  • In-person farm visits: We personally visit the tea farms to assess the quality of the tea fields and production facilities. This hands-on approach allows us to directly observe the farming practices and ensure that they align with our commitment to organic and sustainable tea production.
  • Biodiversity preservation: We also emphasize the importance of biodiversity around the tea fields. We strive to ensure that the tea farms we source from promote a lively ecosystem by fostering diverse plant and animal species.
JAS Japanese Agriculture Standards logo

JAS Certified

The JAS logo that you will find on some of our teas is short for Japanese Agriculture Standards. This label ensures that products are grown without pesticides or chemicals.

At Nio, we prioritize tea fields that are completely free of pesticides or chemicals during our selection process. When working with larger tea farmers, we require them to provide us with the JAS label, which they can acquire through soil sampling and testing.

While partnering with smaller tea farmers who haven't obtained certification yet, we accept the "pesticide-free" label and aim to provide opportunities for small farmers without making the screening process too rigorous. Our goal is to support exceptional tea production while maintaining our commitment to pesticide-free farming.

Necessary teaware

When it comes to preparing the perfect cup of Asamiya Saemidori Matcha, having the right tools is key. While the matcha itself is of the highest quality, using the proper utensils can help you achieve the optimal flavor and texture. Here are some essential tools you might want to consider:

  • Matcha bowl: The matcha bowl, also known as a chawan, is a wide and shallow bowl that allows you to whisk the matcha thoroughly without spilling. It also provides ample space to appreciate the vibrant green color of the matcha.
  • Bamboo whisk: A bamboo whisk, or chasen, is a necessary tool for achieving a frothy and smooth matcha. Its delicate yet sturdy tines are designed to whisk the matcha powder and water into a consistent blend without clumps or lumps.
  • Chashaku: The chashaku is a bamboo scoop that allows you to measure out the right amount of matcha powder for a single serving. It also helps you transfer the matcha powder into the bowl without spilling or wasting any of the precious powder.
  • Sifter: Using a sifter can help ensure that your matcha is free of any lumps or impurities, resulting in a smoother and more consistent blend. It's a simple tool that can make a big difference in the final taste and texture of your matcha.

Shiga farm in japan

Location of production and farmer

Information about the farm

This tea was produced by Takatomo Katagi who took over the business from his father. His father was one of the pioneers of organic farming in Japan, growing tea without pesticides and chemical fertilizers as early as the 1970's. To take care of the insect problem without pesticides, the farmers began attracting spiders, bees and praying mantis to the field to create a healthier ecosystem. To deal with the weeds without herbicides, they plucked the weeds by hand. After much work, they finally had a crop of tea plants that were even stronger and more lively than ever before!

Sourced in Shiga

Japan

This tea comes to us from the farm of Katagi Kouka En, a family owned tea business that has been growing tea in Shiga for seven generations. The field is located in central Japan, close to Lake Biwa, the largest lake in Japan. The tea has been grown without pesticides or organic fertilizers since the 1970's. The field is fertilized with a combination of fallen leaves and soil, to create a more natural growing environment for the tea plants.

Cultivar and tea plant variety

As the name would suggest, the Asamiya Saemidori Matcha is made from the Saemidori cultivar.

  • The saemidori cultivar is well-sought after in Japan and it is used to make some of the top green teas like gyokuro and matcha. It brings a light sweetness to the tea, and minimizes the bitterness in the taste.
