To evaluate the Gokou Matcha Koiai, we evaluated the texture of the matcha as well as the flavor. Does it produce a dryness, sweetness, minerality or acidity? We’ll also evaluate how thick or rich the consistency of the matcha is, otherwise known as mouthfeel. Finally, for matcha specifically, we like to take a look at the vegetal flavor of the tea, as this is a profile consistent across all types of matcha.

Step 1 - Observing the Appearance

The color of the Gokou Matcha Koiai is a darker olive green color and its sifted into a fine powder

Step 2 - Assessing the Aroma

The aroma coming off the powder as it is mixed into water is salty and savory, almost like a marinated tofu

Step 3 - Tasting the Tea

The Gokou Matcha Koiai starts off strong with a rich savory flavor. There are these steamed vegetable notes in the mid palate but they are well balanced by the creaminess. The finish is slightly on the drier side, with a slightly starchy, graham cracker sweetness added in.

For the most part, the Gokou Matcha Koiai is smooth and savory. There is absolutely no acidity, but there is a hint of sweetness and a hint of dryness

You’ll find that the Gokou Matcha Koiai, as well as some of our other teas bear the JAS logo, certifying that they comply with the Japanese Agriculture Standards. These regulations prohibit the use of pesticides and chemicals in the cultivation of tea. 

At Nio, we selectively work with farmers who practice pesticide and chemical-free farming methods. When working with bigger tea farmers, we require them to have the JAS label, which can be obtained through soil sampling and analysis.

For smaller tea farmers with limited resources for soil testing, we also accept the "pesticide-free" label to provide them with the opportunity to get their teas discovered while adhering to our commitment to sustainability and quality.

How to prepare the tea

To prepare the Gokou Matcha Koiai and make a perfect bowl of matcha tea, follow these basic steps:

    Step 1

    Take 2 grams of matcha powder and sift it into your matcha bowl to eliminate clumps caused by humidity.

    Step 2

    Heat the water up to 70 degrees Celsius or 160 degrees Fahrenheit.

    Add around 1 tablespoon of water to the bowl and stir the matcha powder until it forms a smooth, consistent paste. Then, add 100ml of water to the bowl

    With your whisk, gently scrape the sides and bottom of the bowl to blend the matcha and water.

    Vigorously whisk the matcha in quick zigzag motions using your wrist until a light green foam forms on top.

Necessary teaware

If you're planning to make matcha, you will need some specific tools and accessories, including a matcha bowl (chawan) - a wide, shallow bowl typically made of ceramic or porcelain that is designed for whisking matcha. You'll also need a matcha whisk (chasen) made of bamboo and featuring thin tines, which is used to mix and froth the matcha powder with hot water. A bamboo scoop, called a matcha scoop (chashaku), is also necessary to measure the correct amount of matcha powder and transfer it to the bowl. Lastly, using a sifter to sift the matcha powder is a crucial step in the traditional Japanese tea ceremony and is also recommended for everyday use to ensure a consistently smooth texture and high-quality cup of matcha.

Information about the farm

The Osada family has been cultivating tea in Shizuoka for generations. They have successfully transformed their small, family-run tea farm into a medium-sized enterprise that provides employment opportunities to many people in the surrounding area.

Despite producing a higher quantity of tea, they continue to uphold their commitment to quality. They achieve this by partnering with small producers located in the mountains. By doing this, they are able to combine the attention to detail of a small tea field with the experience and resources of a larger operation. To improve quality further, they relocated their production facility to the mountains, closer to the source of their tea.

The Gokou Matcha Koiai is produced in the organic village of Isagawa, which is a term used to refer to a group of tea farmers who have pledged to grow their tea without the use of harmful pesticides or chemicals.

When it comes to tea cultivation, it's not just enough to ensure that one's own fields are free from pesticides and chemicals. It's equally important to ensure that the surrounding lands are also free from these harmful substances. This is why it's crucial for the farmers of Isagawa to collaborate and ensure that all their tea fields are entirely organic.
