Matcha is a premium, powdered green tea used during the Japanese tea ceremony. To produce matcha, first the tea plants need to be shaded for 21 days or more to boost the chlorophyll, caffeine and theanine. This gives the tea a deep green color and it also enhances some of the health benefits of the tea. The caffeine and the theanine combine to give you a calm alert feeling throughout the day, without the crash or jitters you get from coffee. Only the youngest leaves are used for matcha, further enhancing the sweetness and the nutrient density of the tea. Then the stems and veins are removed and the leaves are ground in a large stone mill into a fine powder. The stone mill is only able to produce 50 grams of matcha in one hour.
