    • 1/4 cup (60 ml) milk

    • 3 tbsp unsalted butter, softened

    • 1/2 cup (100 g) caster sugar

    • 4 large eggs

    • 3/4 cup (100 g) all-purpose flour

    • 1 tsp vanilla extract

    • 2 tbsp cold water

    • 1 cup (200 g) white chocolate, melted and slightly cooled

    • 2 1/2 cups (600 ml) heavy cream

    • 2 tbsp cold water

    • 1 1/4 cups (300 ml) heavy cream

    • 2 tbsp matcha tea powder

    • 1/3 cup (100 g) powdered sugar

      1. Preheat your oven to 350°F (175°C). Grease and line a round cake pan with parchment paper.

      2. In a bowl, mix the softened butter and caster sugar until light and creamy. Add the eggs, one at a time, beating well after each addition.

      3. Stir in the matcha tea powder and vanilla extract. Gradually add the all-purpose flour and milk, alternating between them, until a smooth batter forms.

      4. Pour the batter into the prepared cake pan and bake for approximately 20-25 minutes or until a toothpick inserted into the center comes out clean. Let the cake cool completely.

      5. Soften the gelatin leaves in cold water for a few minutes. If using gelatin powder, dissolve it in 2 tbsp of cold water. Set aside.

      6. In a microwave-safe bowl, melt the white chocolate, stirring occasionally. Let it cool slightly.

      7. In a separate bowl, whip the heavy cream until soft peaks form. Gently fold in the melted white chocolate and dissolved gelatin.

      8. Spread the white chocolate mousse evenly over the cooled matcha sponge cake. Chill in the refrigerator for at least 1 hour to set.
