Shaded for two weeks, the Tamaryokucha MIdori is a mixture of tea stems and tea leaves. The stems give the tea a full-bodied hay flavor with a slight bitterness on the top note, which develops into a nice natural umami flavor. This tea is slightly more acidic than the Tamaryokucha Bessaku but still a very mild tea that is quite enjoyable.
This tea takes on a unique form. Instead of being rolled, it is curled in the shape of a “comma”. Tamaryokucha is also known in Japan as “Guricha”, which means “curled tea”. This tea is not rolled into a needle shape like a higher-grade sencha or gyokuro.
The farm of Satoru Fujisako has been producing organic green teas for two generations. These teas are not only certified in Japan but also the EU, Switzerland, Canada and USA.
