Tsuyuhikari Kabuse Sencha

This tea picks up a light and sweet flavor thanks to the long shading process. Normally, Tsuyuhikari is known for contributing this bold umami flavor, but it is more balanced with this kabuse sencha. This tea comes from Yame, an area famous for its production of shaded teas. If you are a fan of these smoother and sweeter teas, you are sure to love this one!

Golden Sencha

This premium sencha is made from the finest tips of the tea plant, delivering plenty of nutrients to the tea. The flavor is powerful, complex and smooth. Normally, a Yabukita sencha would produce more of a grassy flavor, but this one is more well balanced. It begins with a strong savory flavor which later allows space for these powerful edamame and baby spinach notes. The tea has some subtle fruity notes to it, which pick up in the second steeping. In the second steeping of this tea, you will notice a tropical, citrusy note similar to that of grapefruit and banana. This tea is quite an experience, and the well-seasoned sencha drinkers will certainly appreciate both the power and complexity of this tea.

Sencha Henta

This sencha is a blend of the cultivars Asatsuyu, Okumidori and Saemidori as well as 5 others. From these 8 cultivars, it inherits a beautiful sweetness, a round smoothness and a mouth-watering grassy note towards the end. The liquor of this tea is a light yellow, but is a bit thicker, similar to the mouthfeel of a Gyokuro. Even though this tea has a strong taste profile to it, it carries no bitterness at all. You may notice notes of sweet corn, fresh cut grass and a nice citrusy note in the end.

Meet the Farmer

Golden Sencha:

We visited the Farmer, Kawaji-san in November 2019. We got a chance to sit down with him and his family to do a few tastings of the sencha teas he had created. It was clear that a lot of thought went into producing these teas, and the farmer displayed them to us with great pride. He blended different tea varieties together to produce entirely different teas. Ultimately, this is one of the teas we settled on.

Henta Sencha:

This tea comes to us from Mr. Henta, an organic green tea farmer in Kirishima. Mr. Henta is quite knowledgeable about tea plant varieties, also called cultivars. Although his farm is on the smaller side, he grows 8 different types of tea plants. He can then combine these cultivars into different tea blends to get the perfect flavors.

About the Farm

Golden Sencha:

This tea comes to us from Hioki City in Kagoshima. It is grown on sea level in a warm, subtropical region in southern Japan with lots of rainfall. The tea in this region is nurtured by fertile volcanic soils and a warm climate.

Sencha Henta:

This tea comes from the town of Kirishima, close to Kagoshima. The farm where this tea is grown is surrounded by dense forest and some small mountains, making it a very natural and beautiful setting to grow organic green tea.

How to Brew it

Add 5 grams of leaves to the teapot or strainer and then pour in 150ml to 200ml of water (160 degrees Fahrenheit) and let the tea brew for 1 minute. You can brew the leaves 2-3 more times with the same temperature for 20 seconds each
