The taste of the tea is influenced by the surrounding forest, which gives it a light note of birch tree bark, which is followed by a fine umami developing into a sweet, floral note at the end.
This tea is quite rare. The farmer Noike Yuma produces only around 5,000 packages of this tea per year. His tea field is located in the prefecture of Wazuka, around 40 km from Kyoto.
Noike Yuma has been doing natural farming since 2014 after he left one of the top universities in Tokyo to follow his passion to create great tea. During his studies, he spent several summers helping other farmers harvest and prepare their teas.
