This is a sweet deep steamed sencha from southern Japan. The first steeping is very light and sweet, with a pleasant note of edamame towards the end. The second steeping becomes more bold and full-bodied, with the sweet corn note from the first steeping subsiding and the edamame note beginning to develop more and more. From steeping to steeping, the tea develops more of a vegetal flavor and less of a sweetness. This change leads to a tasting experience that evolves from the first steeping to the third, creating 3 entirely unique cups of tea. You can also continue to brew the tea longer without it losing flavor. Even after the 5th steeping you will notice a vibrant green color and a full-bodied flavor to the tea.

Meet the Farmer

We visited the Farmer, Kawaji-san in November 2019. We got a chance to sit down with him and his family to do a few tastings of the sencha teas he had created. It was clear that a lot of thought went into producing these teas, and the farmer displayed them to us with great pride. He blended different tea varieties together to produce entirely different teas. Ultimately, this is one of the teas we settled on. 

About the Farm

This tea comes to us from Hioki City in Kagoshima. It is grown on sea level in a warm, subtropical region in southern Japan with lots of rainfall. The tea in this region is nurtured by fertile volcanic soils and a warm climate. 

How to Brew it

Add 5 grams of leaves to the teapot or strainer and then pour in 150ml to 200ml of water (160 degrees Fahrenheit) and let the tea brew for 1 minute. You can brew the leaves 2-3 more times with the same temperature for 20 seconds each

We make sure to only source teas from reputable farmers that grow tea without the use of conventional pesticides or chemicals. We meet with the farmers in person and tour the fields and facilities. We look at the sustainability of the field, the attention to detail and quality control of the facility and of course the taste of the tea.
