To assess the Uji Tea Chanoka Silver, we examined both its texture and flavor. Our evaluation encompassed factors such as dryness, sweetness, minerality, and acidity. Additionally, we gauged the thickness and richness of the matcha, otherwise known as mouthfeel. Lastly, we analyzed the tea's vegetal flavor, which is a characteristic that is consistent across all types of matcha.

How to prepare the tea

To prepare the Uji matcha, follow the basic steps bellow for optimal results. While it's possible to simplify this process, we recommend following these steps for the best matcha experience.

    Step 1

    Start by sifting 2 grams of matcha powder into your bowl to remove clumps that may have formed due to humidity.

    Heat the water up to 70 degrees Celsius or 160 degrees Fahrenheit.

    Next, pour approximately 1 tablespoon of water into the bowl and mix the powder into a paste to ensure even distribution. Then, pour 100ml of water into the bowl.

    Gently scrape the sides and bottom of the bowl to ensure that the matcha is thoroughly combined with the water.

We source this uji green tea from Takada Masahiro, a farmer based in Uji, who runs his family business at Chanoka. The legacy of Chanoka dates back to 1900, when Masahiro's great grandfather established their first tea garden in Uji. Since then, their family has been passionately involved in cultivating and manufacturing some of the finest teas in Japan.

This is a Kyoto Uji green tea. Kyoto and Uji are the two most famous regions for Japanese green tea production. This specific green tea is cultivated on Mr. Chanoka's farm in Uji. Grown at an altitude of 400 meters, the matcha is shaded for 3 weeks before the harvest to develop a nice sweet and savory flavor.

This Uji green tea is made from the Asahi cultivar, a rare green tea making up a small fraction of the tea produced in Japan.

  • Asahi

    The name “asahi” means morning sun, and this tea cultivar is perfect for the production of matcha. When the leaves are shaded and ground, the tea produces a bright green color and a smooth, rich flavor.
