In our assessment of the Asamiya Saemidori Matcha, we closely examined both the texture and flavor of the tea. Our evaluation included analyzing whether it produces dryness, sweetness, minerality or acidity, as well as assessing the thickness or richness of its consistency, known as mouthfeel. Lastly, we scrutinized the vegetal flavor of the matcha, which is a distinctive characteristic shared by all types of matcha.

The tea begins with a milky consistency which later turns into a vegetal and citrusy flavor profile. The acidity of the tea awakens the palate and the mild dryness towards the finish leaves the palate feeling cleansed and refreshed.
Step 4 - Evaluating the sensation on the palate
This matcha is very mild and quite smooth in its consistency, allowing the acidity and dryness to play without becoming overwhelming. There is a steamed vegetable characteristic in this tea as well as a savory note.

JAS Certified
The JAS logo that you will find on some of our teas is short for Japanese Agriculture Standards. This label ensures that products are grown without pesticides or chemicals.
At Nio, we prioritize tea fields that are completely free of pesticides or chemicals during our selection process. When working with larger tea farmers, we require them to provide us with the JAS label, which they can acquire through soil sampling and testing.
While partnering with smaller tea farmers who haven't obtained certification yet, we accept the "pesticide-free" label and aim to provide opportunities for small farmers without making the screening process too rigorous. Our goal is to support exceptional tea production while maintaining our commitment to pesticide-free farming.
How to prepare the tea
To prepare the Asamiya Saemidori Matcha, follow these basic steps to get the best bowl of matcha tea. While you can get creative and simplify this process, its recommended you follow it closely in the beginning to practice the proper technique

Step 1
Start by sifting 2 grams of matcha powder into a bowl to remove any clumps that may have formed due to exposure to humidity.

Heat the water up to 70 degrees Celsius or 160 degrees Fahrenheit.

Add about 1 tablespoon of water to the bowl and mix the matcha powder into a paste to ensure that it is evenly distributed. Next, pour in 100ml of water.

Gently scrape the sides and bottom of the bowl to combine the matcha with the water.

Finally, whisk the matcha up using your wrist in rapid zigzag motions until a light green foam appears on top.

- Chashaku: The chashaku is a bamboo scoop that allows you to measure out the right amount of matcha powder for a single serving. It also helps you transfer the matcha powder into the bowl without spilling or wasting any of the precious powder.

Information about the farm
This tea was produced by Takatomo Katagi who took over the business from his father. His father was one of the pioneers of organic farming in Japan, growing tea without pesticides and chemical fertilizers as early as the 1970's. To take care of the insect problem without pesticides, the farmers began attracting spiders, bees and praying mantis to the field to create a healthier ecosystem. To deal with the weeds without herbicides, they plucked the weeds by hand. After much work, they finally had a crop of tea plants that were even stronger and more lively than ever before!

This tea comes to us from the farm of Katagi Kouka En, a family owned tea business that has been growing tea in Shiga for seven generations. The field is located in central Japan, close to Lake Biwa, the largest lake in Japan. The tea has been grown without pesticides or organic fertilizers since the 1970's. The field is fertilized with a combination of fallen leaves and soil, to create a more natural growing environment for the tea plants.
Cultivar and tea plant variety
As the name would suggest, the Asamiya Saemidori Matcha is made from the Saemidori cultivar.

The saemidori cultivar is well-sought after in Japan and it is used to make some of the top green teas like gyokuro and matcha. It brings a light sweetness to the tea, and minimizes the bitterness in the taste.
