When assessing the flavor of Miyazaki High Mountain Oolong Tea, we examine both the aroma and how the tea interacts with the palate. We assess whether it produces dryness, acidity, minerality, umami, or sweetness. Furthermore, we evaluate the texture of the tea, or mouthfeel. Lastly, for oolong tea, we scrutinize the floral notes which are typically present in most oolong teas.
Step 1 - Observing the Appearance
This high mountain oolong tea has larger leaves with a mix of camo and olive green with some yellow stems.
Step 2 - Assessing the Aroma
The aroma coming off of the wet leaves is light and floral, with notes of coconut milk and lilac

This high mountain oolong tea begins with a light, milky creaminess and slowly begins to develop into this slightly citrusy flavor profile before giving way to these strong, perfumy notes of lilac and hyacinth. The tea returns with a pleasant sweetness and leaves the palate fresh and flowery.

For smaller tea farmers who may not have the resources for formal soil testing, we also accept the "pesticide-free" designation. This allows us to support smaller farmers while upholding our standards of quality and sustainability.
How to prepare the tea
For optimal flavor of your Miyazaki High Mountain Oolong Tea, it is recommended to follow these guidelines. Brewing the tea at an incorrect temperature or time may result in a bitter or diluted taste.

Step 1
Heat up some water in a pan or in an electric kettle until it reaches a temperature of 90 degrees Celsius or 195 degrees fahrenheit.

Step 2
Add 5 grams of leaves to the teapot or strainer

Step 3
Pour in 150ml to 200ml of water (195 degrees Fahrenheit) and let the tea brew for 1.5 minutes

Step 4
Pour out the tea and enjoy your delicious cup of high mountain oolong!

2nd brew
The first brewing of this rare oolong will produce a rich flavor, but don’t throw out the leaves just yet! There is plenty of flavor left in them. You can now reinfuse the leaves 2-3 more times using the same temperature water and a brewing time of 20 seconds.

Cold brew
In addition to producing a delicious cup of hot tea, this rare oolong also works great as a cold brew. Just let the leaves sit in a cup or a pitcher for 3 hours in room temperature water and you should have a cool, refreshing green tea waiting for you when you come back.
Necessary teaware
If you want to prepare this high mountain oolong the proper way, the best tool to use is a Japanese teapot like the Kyusu or the chaho teapot. Oolong is tightly rolled, so the leaves expand when they are infused into water.
You really want to give the leaves a lot of space because if they get cramped they won’t be able to release their full flavor. These teapots also have a built in strainer, which automatically filters out the leaves as you pour so they don’t end up in your cup.

Information about the farm
For a long time, Miyazaki Akira struggled to grow tea only using organic fertilizers. His harvest depended on the weather and the insects, and some years the yield would be quite low. He soon learned that rather than try to control nature, he should try to coexist with it. If the tea plants are grown in accordance with nature, the land will allow the plants to thrive. After learning to accept this, he was able to produce years of great quality tea, all without harming the natural beauty of Gokase.

This high mountain oolong tea was grown in the mountains of Gokase in Miyazaki prefecture. Although Pan roasted and Oolong teas are rare in Japan, this region has become famous for them. The farm of Miyazaki Sabou hasn't used pesticides on their field in the last 40 years and they produce all of their teas organically. The high elevation of the tea field and the mild weather of southern Japan makes for the perfect growing conditions for premium teas.
Cultivar and tea plant variety
This rare oolong is a blend of 3 different tea cultivars, the Minamisayaka, Saemidori and Takachiho. The farmer combines these 3 carefully to capture the best aspects of each.

Minamisayaka
The name Minamisayaka roughly translates to “southern freshness” and it is known for having a milky and floral characteristic. This makes it perfect for making high mountain oolong like this, as you really want to capture these flowery flavors and aromas.

Saemidori
The saemidori cultivar is mostly used for the production of premium green teas like gyokuro and matcha, but it works great in this rare oolong. This cultivar is known for its light and sweet flavor, so it really smooths out the overall flavor of this tea.

Takachiho
This tea cultivar was named after the town it was created in, Takachiho a small village in Miyazaki prefecture. It was created as far back as 1953, making it just as old as Yabukita. The tea variety was intended to be used for kamairicha, but it works perfectly in this high mountain oolong.
