To evaluate the Saemidori Matcha Henta, we evaluated the texture of the matcha as well as the flavor. Does it produce a dryness, sweetness, minerality or acidity? Weโ€™ll also evaluate how thick or rich the consistency of the matcha is, otherwise known as mouthfeel. Finally, for matcha specifically, we like to take a look at the vegetal flavor of the tea, as this is a profile consistent across all types of matcha.

The abbreviation JAS denotes Japanese Agriculture Standards, which guarantee that products have been grown without the use of pesticides or chemicals.

Our tea selection process prioritizes tea fields that are completely free from pesticides or chemicals. While collaborating with larger tea farmers, we require them to provide us with the JAS label, which they can afford due to soil sampling and testing.

However, we also partner with smaller tea farmers who have not yet obtained certification but produce outstanding tea. In such cases, we accept the "pesticide-free" label and strive to provide opportunities for small farmers without making the screening process too difficult.

How to prepare the tea

When preparing the saemidori matcha henta, you just need to follow a few basic steps. You can simplify this process if you prefer, but if you really want to get the best results from your bowl of matcha, we recommend using these steps.

    Step 1

    Sift 2 grams of matcha powder into your matcha bowl. This will remove the clumps that form in the matcha powder as it is exposed to the humidity in the air.

    Step 2

    Heat the water up to 70 degrees Celsius or 160 degrees Fahrenheit.ย

    Pour in just enough water to mix the matcha powder into a paste (usually about 1 tablespoon). This process also helps the matcha mix evenly into the water. Pour in 100ml of water at a temperature.

    Start to combine the matcha into the water by gently scraping off the sides and the bottom of the bowl

    Begin to whisk the matcha up in rapid zigzag motions using your wrist until a light green foam begins to appear on top

Necessary teaware

When preparing matcha, you will need certain accessories, including a matcha bowl (chawan), which is a shallow ceramic or porcelain bowl specifically designed for whisking matcha. You will also need a matcha whisk (chasen), which is made of bamboo with numerous thin tines that mix and froth the matcha powder with hot water. A matcha scoop (chashaku) is also necessary to measure the correct amount of matcha powder and transfer it to the matcha bowl. Additionally, using a sifter is recommended to ensure that the matcha powder is smooth and consistent, making it easier to dissolve in water and creating a frothy texture when whisked. Sifting is an important step in the traditional Japanese tea ceremony and is also recommended for everyday use to ensure a high-quality cup of matcha.

Cultivar and tea plant variety

As the name would suggest, the saemidori matcha henta is made from the Saemidori cultivar. This is a rare cultivar in Japan but it works great in premium teas like gyokuro and matcha.

  • Saemidori

    Although it has a lower yield than Yabukita and is quite sensitive to the cold, Saemidori is still cultivated due to the delicate and sweet flavor it produces. Mr. Henta uses this cultivar in the saemidori matcha henta to produce a delcious sweet and smooth flavor.
