To assess the Asamiya Sayamamidori Matcha, we examined both its texture and flavor profile. This included assessing its dryness, sweetness, minerality, and acidity. Additionally, we evaluated the thickness or richness of its consistency, which is also known as mouthfeel. Finally, as with all types of matcha, we paid attention to the vegetal flavor profile of the tea.

Step 1 - Observing the Appearance

The powder of this matcha is a slightly darker shade of green.

Step 2 - Assessing the Aroma

The aroma coming off of this tea is slightly earthier with a nutty sweetness.

Step 3 - Tasting the Tea

This tea begins with a smooth, milky consistency and later transitions to a slight dryness with notes of walnut. There is some acidity at play that quenches the palate and leaves it with a lingering finish.

Step 4 - Evaluating the sensation on the palate

How to prepare the tea

To prepare the Asamiya Sayamamidori Matcha, follow these basic steps to get the perfect bowl of matcha tea. While you can simplify this process and get creative, it is recommended to follow these steps closely in the beginning to practice the proper matcha preparation technique.

    Step 1

    Sift 2 grams of matcha powder into a bowl to remove any clumps that may have formed due to humidity.

    Heat the water up to 70 degrees Celsius or 160 degrees Fahrenheit.

    Add approximately 1 tablespoon of water to the bowl and mix the matcha powder into a paste, ensuring even distribution. Pour in 100ml of water.

Information about the farm

This tea was meticulously crafted by Takatomo Katagi, who inherited the business from his father. His father was a pioneer of organic farming in Japan, practicing pesticide-free and chemical fertilizer-free tea cultivation as far back as the 1970s. To tackle insect issues without resorting to pesticides, the farmers cleverly attracted spiders, bees, and praying mantises to the fields, creating a healthier ecosystem. To address weed growth without herbicides, they diligently plucked the weeds by hand. Through their unwavering efforts, they succeeded in cultivating tea plants that were even stronger and more vibrant than ever before.

This tea originates from Katagi Kouka En, a family-owned tea business with a rich history spanning seven generations in Shiga, Japan. The tea field is situated in central Japan, near the picturesque Lake Biwa, the largest lake in Japan. Since the 1970s, the tea has been cultivated without the use of pesticides or synthetic fertilizers. Instead, fallen leaves and natural soil are used as a combination of organic fertilizers, creating a more sustainable and environmentally-friendly growing environment for the tea plants.

As the name would suggest, the Asamiya Sayamamidori Matcha is made from the Sayamamidori cultivar.

  • The Sayamamidori cultivar is one of the first cultivars to be registered in Japan and it was created in Saitama prefecture. It has a dark green color and it produces a vibrant tea with an excellent aroma.
