The tea plant produces caffeine as a defense mechanism to protect itself against insects. Caffeine can be bitter or even poisonous to small insects, so it makes for a good protective coating.
Factors that influence the caffeine in Hojicha
Tea Harvesting influences significantly the level of caffeine in the tea. The younger, more tender leaves of the tea plant are more vulnerable to insects, so they require more caffeine to protect themselves. The older, more mature leaves are tougher, and they don’t produce as much caffeine.
