To evaluate the flavor of the Tamaryokucha Kumamoto Green Tea we look for a combination of the aroma and also how the tea interacts with the palate. Does it produce a dryness, acidity, minerality, sweetness or umami? We’ll also evaluate the texture of the tea, otherwise known as mouthfeel. Finally, for sencha tea, we’ll evaluate it based on how vegetal the taste profile is as this is a common characteristic throughout most sencha teas. 

Step 1 - Observing the Appearance

Rather than being rolled into needles, these dark green tea leaves of the Tamaryokucha Kumamoto Tea are turned into these “comma” shapes, that are slightly more rounded

Step 2 - Assessing the Aroma

The aroma coming off the tamaryokucha green tea leaves is light and citrusy, with a hint of this tart berry flavor.

Step 3 - Tasting the Tea

The Tamaryokucha Kumamoto Tea begins with a pleasant warm cereal note that suddenly transforms into a fresh citrusy flavor. The tea has a complex character to it, with lots of minerality. It finishes off with a mouthwatering astringency that lingers on the palate. The tamaryokucha also takes on a balance of these hay or summer grass flavors

How to prepare the tea

To prepare this tamaryokucha green tea, you can use a lower temperature water and a shorter brewing time. 1 minute should be more than enough time to extract a delicious flavor from the tea.

    Step 1

    First, heat the water to a temperature of 60 degrees Celsius or 140 degrees Fahrenheit. This will be the perfect temperature for this tamaryokucha green tea

    Step 2

    Add 5 grams of the kumamoto tea to your kyusu teapot and then pour in 150ml of the water you heated previously.

    Step 3

    Allow the tea leaves to brew in the water undisturbed for 1 minute, which should be enough time for the tea leaves to open up and release their flavor into the water.

    After the brewing time is up, you can pour out your sencha and the teapot will automatically filter out the leaves so they don’t end up in your cup. Enjoy your tea!

    2nd brew

    Don't throw away the tea leaves after the first brewing! The Tamaryokucha Kumamoto Tea can be brewed 2-3 more times. To brew the tea a second, third or even fourth time, simply pour additional hot water into the teapot and allow the leaves to steep for 20 seconds.

Necessary teaware

To brew up a delicious cup of this tamaryokucha green tea, you’ll need a kyusu teapot. The best teapot for this is the Fukamushi teapot, because it has a circular mesh filter that makes it easier to sift out the tea leaves as you pour.

Alternative without teaware 

If you don’t have a teapot at home, the next best thing to use for the Tamaryokucha Kumamoto Tea is a tea strainer. This may not be quite as good as the teapot, but at least it will separate the tea leaves as you pour so they don't end up in your cup!

Information about the farm

Mr. Fujisako is the first organic farmer in his region of Kumamoto. At one point, he decided to risk everything and convert his farm into an organic operation. It cost him $2 million at the time to change all of his 8 acres of tea fields over to organic planting. Times were tough for him and his family. Less harvest, higher cost and little interest in organic tea at the time. At one point, he had to sell half of his farm just to be able to feed his family.

Finally, it all worked out and although times were rough then, now he can look back and smile about the journey. Such a courageous man. We admire him for the risks he has taken and love him and his amazing Tamaryokucha tea

This tea comes to us from Kumamoto in Kyushu. When we first visited this farm a few years ago, we got a glimpse of how important pesticide free farming is. The farm this tea comes from is positioned next to a non-organic field and you can really see the difference. The organic field is home to many different types of plant species and you can even hear more birds and insects on the field. This field was a stark contrast to the non-organic field just a few meters away, with nothing but hard-packed black earth beneath it and no other plants.

Cultivar and tea plant variety

The Tamaryokucha Kumamoto Tea is made from the Zairai cultivar, the so called “wild cultivar” of Japan.

  • Zairai

    The zairai isn’t technically a cultivar, at least not in the strict sense of the word because it is seed propagated rather than being cloned from trimmings. The name translates to “native” in Japanese and it refers to the older or original tea varieties growing in Japan. There are only a few Zairai tea fields left in Japan, so tea produced from these plants is quite rare and unique.
