This tea begins with a pleasant warm cereal note that suddenly transforms into a fresh citrusy flavor. The tea has a complex character to it, with lots of minerality. It finishes off with a mouthwatering astringency that lingers on the palate. Because there are some stems included in the tea, the tamaryokucha also takes on a balance of these hay or summer grass flavors. The second steeping begins to lean more into the citrusy direction with even more minerality. The warm cereal notes begin to subside and the tea becomes milder overall.

Meet the Farmer
Mr. Fujisako is the first organic farmer in his region of Kumamoto. At one point, he decided to risk everything and convert his farm into an organic operation. It cost him $2 million at the time to change all of his 8 acres of tea fields over to organic planting. Times were tough for him and his family. Less harvest, higher cost and little interest in organic tea at the time. At one point, he had to sell half of his farm just to be able to feed his family.
Finally, it all worked out and although times were rough then, now he can look back and smile about the journey. Such a courageous man. We admire him for the risks he has taken and love him and his amazing Tamaryokucha tea
About the Farm
This tea comes to us from Kumamoto in Kyushu. When we first visited this farm a few years ago, we got a glimpse of how important pesticide free farming is. The farm this tea comes from is positioned next to a non-organic field and you can really see the difference. The organic field is home to many different types of plant species and you can even hear more birds and insects on the field. This field was a stark contrast to the non-organic field just a few meters away, with nothing but hard-packed black earth beneath it and no other plants.
How to Brew it
Add 5 grams of leaves to the teapot or strainer and then pour in 150ml to 200ml of water (160 degrees Fahrenheit) and let the tea brew for 1 minute. You can brew the leaves 2-3 more times with the same temperature for 20 seconds each

We make sure to only source teas from reputable farmers that grow tea without the use of conventional pesticides or chemicals. We meet with the farmers in person and tour the fields and facilities. We look at the sustainability of the field, the attention to detail and quality control of the facility and of course the taste of the tea.
