Hojicha is a roasted Japanese green tea with some very unique notes to it. While most Japanese green teas have a little bit of this edamame and sweet corn flavors, Hojicha plays more off of these roasted chocolate and caramel flavors. During the roasting process, the tea also loses some of its caffeine so Hojicha can be drunk in the late afternoon or evening.Compared to the Noike Hojicha, this tea has more of a cereal flavor to it, with a bit of a smoky aftertaste. The tea starts to go into the direction of toasted rice with a hint of wet wood.

About the Farm

This tea comes from Mr. Kawabata in Shizuoka. Mr. Kawabata has been able to develop these nice warmer notes of the Hojicha by roasting the tea leaves. During the roasting process, these leaves lose their grassy and vegetable notes in exchange for notes of coffee, caramel or even chocolate.

How to Brew it

Add 5 grams of leaves to the teapot or strainer and then pour in 150ml to 200ml of water (170 degrees Fahrenheit) and let the tea brew for 1 minute. You can brew the leaves 2-3 more times with the same temperature for 20 seconds each
