This beautiful deep green Fukamushi Sencha brings a powerful sweet and hearty flavor to the palate. This tea is strong and full-bodied without lingering on the side of astringency or bitterness. Because this is a deep steamed tea, the liquid becomes a dark cloudy green color with a smoother and milder taste. The tea also picks up a slight fruitiness and sweetness to it. Fukamushi teas are also great as a cold brew, creating a pleasant fruity infusion that is perfect to enjoy outside.

This tea comes to us from Hioki City in Kagoshima. It is grown on sea level in a warm, subtropical region in southern Japan with lots of rainfall. The tea in this region is nurtured by fertile volcanic soils and a warm climate. Unlike in the north where the frost-resistant Yabukita cultivar is preferable, the farmers in the south are able to grow a diverse array of different tea varieties. This particular tea is made from the Yutaka Midori cultivar, considered to be the ideal cultivar for Fukamushi style green teas. The name roughly translates to "Abundant Green", due to the dark green color it produces. This cultivar is popular in Kagoshima, where they don't need to worry about frost. The tea buds early and is harvested up to 5 days before the Yabukita. 

We visited the Farmer, Kawaji-san in November 2019. We got a chance to sit down with him and his family to do a few tastings of the Fukamushi teas he had created. It was clear that a lot of thought went into producing these teas, and the farmer displayed them to us with great pride. He blended different tea varieties together to produce entirely different teas. Ultimately, this is one of the teas we settled on. 

Steeping: 60 degrees C/ 140 degrees F for 45-60 seconds. Can be steeped up to 6 times at 20 seconds each
