Mr. Issin is an organic green tea farmer in Miyazaki, a prefecture in southern Japan. He lives in the village of Takachiho with his family in their 200-year-old home. This house has been in their family for generations, and it is located in close proximity to the tea fields. All of Mr. Issin’s tea is grown on mountain plantations, giving distinct character to the tea. He also makes his own fertilizer out of rice hulls and other organic materials.
He specializes in the production of roasted teas, like Kamairicha a pan-fired tea and Hojicha, a fully roasted tea. These teas offer a unique flavor profile that you can’t find in other Japanese green teas. They have notes of caramel, chocolate, cashew nuts and even coffee.
