These super green teas are called “Fukamushicha”. Fukamushicha is a deep steamed tea, that is quite popular in Japan. Normally, Japanese green teas are steamed after harvesting. What makes Fukamushicha unique is that it is steamed for an extra 30 seconds to 60 seconds. During this time, the cell membranes of the tea are softened, giving the infusion a deep green cloudy color. This also renders the tea smoother and less bitter. The tea still maintains the flavor of a sencha, but it picks up more of an umami or savory flavor, similar to a Gyokuro. In the case of the Fukamushi Yamaga, it actually gives the tea a distinct fruity note!
