This organic matcha is produced by Mr. Nakai, an organic tea farmer in Wazuka, near Kyoto, the old capital city of Japan. His family is one of the first in Japan who started growing tea organically. After talking with him, we found out his father was one of the founders of the organic “JAS” labels in Japan.
This Matcha is from the Yabukita cultivar, the most widely grown cultivar in Japan. The tea has a very strong vegetal flavor and a smooth creamy note of butternut. Unlike the Washimine, this tea has a tiny bit of astringency, but far less when compared with a standard matcha. This Matcha is of supreme quality, evident in its strong green color.
Preparation: 1-1.5g per 150ml; 80 degrees Celsius
